Ever-busy chef Matty Matheson is occupied with an expansive array of digital content, even in the middle of quarantine, but that doesn’t mean he doesn’t have time to fry up some comfort food. In an exclusive video for HYPEBEAST, Matheson demonstrates how easy it is to cook fried chicken from the comfort of your own house.
Matheson’s snappy three-minute clip is a brief, yet thorough, rundown on the essential steps for creating perfectly crispy chicken. After cutting up a whole chicken, Matheson tosses the pieces into a blend of flour and spices, letting the meat sit for several hours before returning. The treated chicken is spaced out inside a large pot of oil — already heated atop the stove — for what Matheson described as a “shallow fry.” Once browned, the bits of meat are placed atop a drying rack before being slathered with honey and eaten — no buttermilk, no brine and no need for thermometers.
