New School Foods has unveiled its new plant-based salmon and it looks just like the real thing.

The new salmon marks the first product for the three-year-old company. With growing plant-based food alternatives in the industry, there’s an interest in crafting substitute products that look and taste like the real thing. To make the fish alternative, New School Foods developed its own muscle fiber and scaffolding platform to make whole-cut meat substitutes.

What stands out about the new tech is that it offers the same flavors, fats, colors, mouthfeel and texture as the real fish variations. Additionally, the system utilizes a cold-based method to create the characteristics and flavor profile.

“All these cold steps in our process can use off-the-shelf equipment from adjacent industries that use freezing but not for this purpose, and that’s really important because a lot of the stuff that’s trying to be an alternative to extrusion is pretty science fiction, and there’s no scaled up infrastructure,” said New School Foods’ CEO, Christopher Bryson. “When we’re talking about feeding the world in a relatively short period of time, by using off-the-shelf, scaled-up equipment that does high volume, we can very quickly and reliably get to feeding a very large number of people.”
