One of the greatest gastronomy experiences is closing its door in 2024. Noma, which is located in Copenhagen and has been named the best restaurant in the world multiple times, has been credited with the invention of New Nordic Cuisine. Noma has topped the list of the World’s 50 Best Restaurants five times, with the most recent time in 2021, amidst the pandemic.

Since its opening 20 years ago, Noma, which was created by chef and owner René Redzepi, has been known for serving dishes featuring ingredients that are locally foraged. From game-inspired dishes like reindeer brain custard served with bee pollen to fermented rice ice cream featuring oyster caramel, chef René Redzepi has built Noma into a three-Michelin-star must-go stop in Copenhagen. In a statement in the restaurant’s website, Noma announced,

“Winter 2024 will be the last season of noma as we know it. We are beginning a new chapter; noma 3.0.”

The team also noted that starting the following year in 2025, the restaurant will begin its transformation into “a giant lab – a pioneering test kitchen dedicated to the work of food innovation and the development of new flavors, one that will share the fruits of our efforts more widely than ever before.” Noma seems to be leaning into its innovative work where it will focus on taking its culinary expertise around the world. The “next phase,” as the website calls it, will see the team travel around the world collecting knowledge on new ideas and flavors. While the physical restaurant may not be here after 2024, Noma plans to still bring sought-after flavors to Copenhagen in a non-specified season. They plan to still serve guests with some of the world’s best gastronomic experiences, however ” being a restaurant will no longer define us. Instead, much of our time will be spent on exploring new projects and developing many more ideas and products.” The statement concludes with their mission,

Our goal is to create a lasting organization dedicated to groundbreaking work in food, but also to redefine the foundation for a restaurant team, a place where you can learn, you can take risks, and you can grow!

We’ve spent the last two years planning, and we’re ready for the next many years of realizing our goal.

We hope you’ll join us on this new journey.

Thank you!
