Pastry Artist Dinara Kasko Designed Algorithmically-Modelled Cakes
Filled with mousse, ganache and a meringue of chocolate ruby.
Pastry artist Dinara Kasko had created an 81-piece algorithmically-modeled cake which highlights Barry Callebaut’s ”ruby chocolate” product at the ruby chocolate event in Shanghai. Kasko utilized the computer graphics generator “Grasshopper,” to create a mold for each piece and was inspired by paper engineer Matthew Shlian.
The mold was made by changing the tilt of its traditional pyramid composition. In the cake’s interior are ingredients such as mousse, ganache and a meringue of chocolate ruby. Barry Callebaut is among the world’s largest cocoa producers and grinders, with an average annual production of 1.7 million ton of cocoa.
