HOTEL FORK & KNIFE Miyajima, opening in March 2026, is envisioned as a cultural retreat that harmonizes tradition, design and gastronomy at the gateway to the UNESCO World Heritage Site of Itsukushima Shrine.
Conceived under the concept “Tradition Served Quietly,” the hotel offers 34 guest rooms across a 2,400‑square‑meter site, designed by architect and artist Fumihiko Sano. Natural materials such as cedar and cypress are paired with artisanal craftsmanship, creating interiors that balance Japanese sensibility with modern refinement.
Key features include a heritage library and a curated select shop, alongside high-end wellness facilities such as a natural hot spring (onsen), a sauna and a fitness gym. The guest experience is further elevated by a “local gastronomy” focus, with a signature restaurant that uses firewood cooking to highlight the rich seasonal bounty of the Seto Inland Sea. This high-end destination aims to provide a sophisticated sanctuary where guests can immerse themselves in Japanese sensibilities, blending local tradition with modern luxury to create a creative and restorative stay.
Dining is central to the HOTEL FORK & KNIFE experience, with a restaurant dedicated to local gastronomy that celebrates Hiroshima’s rich food culture. Supervised by chef Aya Ishihama, the menu highlights seasonal ingredients from the mountain and sea, prepared over firewood to enhance flavor and texture. Guests can enjoy freshly milled rice cooked in donabe pots, alongside reimagined regional dishes that honor traditional techniques. Complementing the restaurant, a bar lounge offers curated local sake and wines, while the in‑house shop ref. Miyajima presents artisanal goods selected by Hiroshima’s renowned ref. boutique.
