Following from the release of The Hundreds x Tapatio hot sauce, Hong Kong’s Yardbird has worked up a special take on the traditional buffalo wings. Dubbed “The Hundreds Hot Wings,” the dish makes use of the sauce as a base, mixing in grounded sesame seeds, mirin, vinegar and melted butter in its seasoning. Mirroring The Hundreds and Tapatio’s LA heritage, the wings are served with red radish, picked carrot, cilantro and lime — in reminiscent of garnishes used in Southern California fast food cuisines. As old fans of Tapatio, Yardbird founders Matt Abergel and Lindsay Jang have long used the hot sauce to enrich flavors, noting that the “great balance of smokiness, spice, and acidity” is just what’s needed for that extra touch.
