As butchers make up an important part of a local community’s food supply, this film offers a much needed update on an art we might not fully appreciate by shopping at a big-chain grocery store. Gone are the stereotypes of the big old man with a bloody smock. Highlighting some of the San Francisco Bay Area’s best spots like 4505 Meats, Avedano’s Holly Park Market and The Local Butchershop, this iteration of The Thrash Lab’s Subculture Club features some of the next generation of cool young butchers who are getting more involved in the way food makes its way from the supplier to the consumer.
One important skill of their craft of mention is not just knowing the anatomy of a given animal and where to cut it, but how that cut will be used in a dish by the end customer. Whether you’re a carnivore or not, the film will at least make you appreciate how much personal effort goes into feeding us.
