Known to many as a founding partner of the incredibly popular Korean BBQ food truck empire Kogi BBQ, Korean-American chef Roy Choi has elevated the notion of “to-go” by offering high quality eats at the best possible prices, thus garnering the title of Food & Wine magazine’s Best New Chef in 2010. Offering unique creations like kimchi quesadillas and short rib tacos, Choi has since expanded into the restaurant world with the openings of Chego, A-frame and Sunny Spot while the Kogi fleet continues to feed upwards of 10,000 mouths per day across the city of Los Angeles. Continuing to maintain his popular blog Riding Shotgun on the side, Choi recently shared some of his own philosophies and musings with filmmaker Alison Chernick as the chef provided a glimpse into his burgeoning culinary domain.
