Lucky Peach TV recently got a behind the scenes look at the kitchen of Pizzarium, a take-out pizza spot in Rome that is known for having some of the best pies in the world. While pizza is most commonly known as a cheap fast-food option favored by partygoers, college students and late night snackers, this isn’t your ordinary street food – in fact Chef Gabriele Bonci is adamant that it’s anything but. Check out the video above as Chef Bonci gives us a rundown of how the pizza al taglio (or “pizza by the slice”) is made, from making the dough 72 hours in advance, to the secret ingredients like dried orange peel, to the importance of the oven in the process.
