Ranked as the top restaurant in the world for two years running by the S. Pellegrino Awards, Copenhagen’s NOMA is synonymous with a truly breathtaking culinary experience. Born out of necessity, the NOMA FoodLab was created by Space – a Copenhagen-based multidisciplinary design studio – on the upper floor of the 18th century warehouse and provides an added area for Chef René Redzepi and his staff to find further inspiration. The whole concept for the NOMA FoodLab started with the need to store all ingredients near the kitchen and was achieved by architecture firm 3XN_GXN. The approach was to design four central multifunctional storage units – each composed from over five hundred uniquely formed wooden cubes – accommodating the Food Lab, the herb garden, staff areas, and office. Bright and spacious, it’s no wonder that NOMA continues to churn out such superb food with such a unique and interesting hybrid space for work, play and everything in between.
