surprisingly i never had the shits after eating so much

Some Recent meals:
Yam fries were decent, but burnt on the sides that were on the bottom of the tray. Anyone know know why? Though I think its cause of the moisture in them (cause i washed the yams before, dried with paper towel and coated in evoo)...

the best fries are often double cooked. they are blanched in cool oil to cook the inside of the potato to give it a fluffy interior, then taken out to cool while the oil gets super hot to get flashed fried. blaching=fluffy potato, flash fried in hot oil=crisp exterior.
