i think all nudies have the stitching
you can always unstitch parts of it. Ive seen people do that on here plenty of times.

i have a pair of slim jim's, but they are baggier then the APC's.

they all have it but some come in the same colour as the denim so they arent noticable unless you are under bright daylight. ie. Slim Jim Blacks Blacks.

I have size 29 in APCs and I'm wearing size 31 for Nudies as we speak...It's not baggy, but it's a little looser in the thigh region, but the same in the knee/shin regions. If they are baggier in the knee/shin/thighs, consider buying thin finns.
