I just want to be able to do the sing along/bouncing ball subtitle, but I have NO idea where to even begin. I've been googling around but there aren't any simple to the point answers. Help would be GREATLY appreciated.

you would definitely use After Effects for that.
You would take a circle shape and animate it to the beat.
Not hard to do but just more tedious than anything.
The thing that makes the circle look like its bouncing is the detailed animation.

The videocopilot.net site has alot of really good core principle tuts for AE and go all the way up to advanced techniques. Also, If you can find em online Lynda Tuts are perfect to start off with, just get the Essential ones.
