Edible Selby: Emilio Fernandez of Sa Foradada

Located on the northwestern coast of Majorca, Spain lies Sa Foradada – Emilio Fernandez’s 40-year-old paella restaurant. Cooking delicacies and treats like squid, cuttlefish, mussels, prawns, clams, crab legs and sea bream, Fernandez and daughter Lidia use simple methods of preparation and traditional techniques like grills and cast-iron pans to create dishes that are as diverse in composition as the surrounding Mediterranean. Todd Selby recently ventured to Sa Foradada where the entire experience was documented in visuals and audio.
