Black Gold: Mote Caviar

NOWNESS and photographer Mark Mahaney have taken a fresh look at the process of a sustainable Siberian sturgeon caviar harvest at the Mote Marine Laboratory in Sarasota, Florida. This caviar fetches top dollar at three Michelin-starred restaurants all over the United States, but due to the sturgeon’s falling numbers which placed it on the endangered species’ list, a more sustainable way to meet the demand for the fish’s premium caviar had to be found. The Mote Laboratory regulates the harvest, while using revenues of the luxurious eggs to generate additional funds for future aquaculture research. Extremely impressive that only a single ounce of Mote’s carefully farmed caviar can be expected to sell for anywhere between $45 to $119 USD.
