Filmmaker Éric Dorchain recently went to capture some footage of the almost hypnotic process of baking bread in his homeland of France, filming Yvan & John of the “Cassons la Croûte” Association as they baked sourdough bread over a wood burning fire. Undervalued in the culinary world, it’s a pleasure to see attention paid to bakers Yvan and John as they use organic flour, wheat and nuts to craft a staple in many, if not all diets around the world.
